How to make a small batch of cupcakes

If you’re craving something sweet, a cupcake may be the answer. But 1 box of cake mix makes 24 cupcakes — and if you make two dozen, you’ll be compelled to eat two dozen, right?
Why can’t you make a few? You can!
The Typical Mom blog has a recipe for making just 6 cupcakes using a boxed cake mix. It’s quick, easy, yummy, thrifty and satisfies your sweet tooth without totally busting your diet. You won’t have stale cupcakes to throw away any more. You’ll still make enough to share. And you’ll have cake mix left over for the next time the cupcake craving strikes.

Recipe for 6 cupcakes
1 cup of a boxed cake mix (any type)
3 tablespoons oil
1/3 cup water
1 egg
Combine all ingredients in a bowl and mix by hand. Spoon batter into 6 cupcake liners in a muffin pan. Bake at 350 degrees for about 15 minutes or until the cupcakes are light brown and springy. Cool. Frost with icing, if you’d like.
